Around a year ago we had to discontinue Tuta, which was an amazing Black IPA with superb reviews. We even received a glowing review from Simon Martin on his Real Ale Craft Beer youtube channel, calling it a magical beer! The discontinuation of Tuta left a black hole (pun intended) in our core range, and we needed to come up with a solid replacement.
Unfortunately, it just wasn’t the right time to be releasing another beer. During COVID times, we had no idea what was going to happen from one week to the next. Would we go into lockdown again? When would airports re-open? When would people be able to meet at each other’s homes again? etc etc.
Still, I kept telling Miguel we needed a stout in our range! People love a good dark beer.
In October of 2021 we decided to start planning the recipe and testing out a few batches. By the time the beer was ready in December we were in the middle of Omicron, yet again plunged into the darkness. When in February the worst of Omicron seemed to be behind us, we decided it would be a good time to start planning for the release of the first batch.
As we pondered the name to give this beer, Russia invaded Ukraine. Like many others, we were shocked and sad to see that in modern day Europe, full scale war was again upon us. What struck us most was that Ukraine was for the most part a country just like ours, democratic and governed by laws. Yet still, chaos erupted. Just like in the physics definition for chaos, random outcomes occur even in systems governed by deterministic laws. And this is where our stout took its name.
