Finally, a moment we’ve been waiting ages for!!!
We’ve been meaning to launch a series of limited release beers for quite some time, yet there was always something else which would come up, or an issue of limited fermentation tanks.
Yet finally we managed to schedule in a long-awaited brew for this Limited Release beer. The idea was to create a craft beer which could be enjoyed in Malta’s warm weather – and having heard a podcast describing cream ales, we thought it would be the perfect fit.
Perhaps our minds were still on the Old Boy process, as we once again wanted to infuse the beer with something unusual. The decision to use pistachios came from a recent (and excessive!) purchase which Jean’s wife Elena had made. Out of fear that it would take ages to find it available again in stores, she had gone out and bought all the remaining 8 jars of pistachio cream available on the shelf.
Upon hearing of her mischief, the story struck a chord – why not create a Pistachio Cream Ale which customers would surely want to buy as many as they could of before it ran out!? Solid business plan right there! 😀 Up until we discovered the jaw-dropping cost of pistachio and the never-ending time it takes to roast the many kilos used in this recipe.
We were lucky enough to have been provided an industrial oven from our good friends at Two Buoys, where Miguel and Jean spent 10 whole hours just roasting the pistachios to a precise roast level, which would ensure the smoothest transition of flavour into the beer.
The end result is one we’re very happy with! It’s a beer that comes pretty close to a lager, goes down excellently in the heat, and will leave a nice little after taste from that rich little nut.
