According to Miguel’s notebook, the first time we brewed Tuta was in February 2019.
The brewing of this beer was quite a roller coaster ride. Around 6 weeks after brewing the first batch, we opened the first bottles and were delighted to say the least. It wasn’t a finished product, we knew, yet we were close already. So we set those 50 or so bottles aside, and set ourselves the task of tweaking the recipe – a little more hops, less bitterness, more chocolate, and so on.
Secondary fermentation had other thoughts. A few weeks after we had declared the first batch of Tuta a success, the glass bottles started going off like little Molotov cocktails. The garage smelled like Paceville’s streets on a Sunday morning, the floor was full of flies and for those who remember the days, stickier than Ryan’s dance floor. There was one time that for a split second, Jean even thought he was being shot at, as two of the bottles exploded in the car as he was driving home.
Whilst we thankfully no longer have any Molotov cocktail incidents, Tuta has consistently been our most challenging beer so far. We’ve learnt a lot through the brewing of this beer and are very proud of the feedback it receives from you, the consumers. It’s always a pleasant surprise for the avid craft beer drinker to find him or herself faced with the option of trying out a dark IPA, which tends to stick out amongst the sea of Pale Ales and IPAs.
Unfortunately though, the last batch of Tuta has been brewed and distributed – at least for the now. As our beers begin to find their way into a larger number of establishments across the islands, the demand on production naturally continues to increase. Yet we are doing all we can not to allow this to take our focus off our mission of continuously creating new beers. It is for this reason that we have decided that Tuta will make way for a new beer – one which we have been pondering on for quite a while. The timing is right to bid farewell to one of our best and welcome in another, one which we can’t wait to open up on a chilly winter day, sit back and enjoy the pleasure only craft ales can bring.
