The decision to produce a Single Malt and Single Hop (S.M.a.S.H) ale was a result of our innate curiosity in two particular ingredients we loved. We were curious to experience what flavour profile and aroma would emanate from a beer brewed using just these two ingredients. After all, what better way to truly appreciate them?
The idea had actually taken seed whilst we sipped upon a small batch saison we had created. We liked the simplicity of it, and the idea of a single malt single hop further enhanced our desire to create a beer using our favourite Maris Otter malt and Mosaic hop.
The result was not far from what we expected – the beer gave off the lovely earthy, fruity, floral, pine (…) aroma from Mosaic, in all its glory and complexity! It was lovely to smell and so crisp and refreshing to drink. The body from Maris Otter balanced the beer extremely well and all in all we had a beer we felt would be suitable for a wider consumer market. A beer which would appeal to a greater number of the local population who were so far mostly used to only drinking lagers. Yet Mosaic would offer a tantalizing bridge into the craft beer world, and till this day we still recommend it as our “entry-craft-beer” to those venturing in for the first time 🙂
