Pistachio Cream ... Ale
Finally - a moment we’ve been waiting ages for!
Launching a Limited Release beer series has been on our minds for years. But between tank space issues and always trying to keep up with demand, the timing just never worked out.
Until now.
We finally cleared the brewing schedule and made space for a long-awaited one-off brew. Inspired by a podcast episode discussing cream ales, we thought the style would be the perfect match for Malta’s warm weather. Light, crisp, clean - just what you want on a sunny day.
And because we clearly hadn’t had enough fun infusing things with unusual ingredients (see: Old Boy), our minds went straight to something a little different: pistachio.
The idea came from a legendary pantry raid by Elena, Jean’s wife. One day she walked into a shop, spotted pistachio cream on the shelf, and panic-bought all eight jars – just in case she’d never see it again. When we heard the story, something clicked.
What if we made a beer people would scramble for in the same way?
That’s how Pistachio Cream Ale was born.
Of course, we hadn’t factored in just how jaw-droppingly expensive pistachios are — or how long it takes to roast them. Thankfully, our mates at Two Buoys came through with an industrial oven. Miguel and Jean spent 10 straight hours roasting pistachios to a precise level that would bring out the smooth, nutty flavour we were after. It was long, sweaty work. But worth every minute.
The final result is a beer we’re seriously proud of — light, lager-adjacent, clean on the palate, and subtly laced with that unmistakable pistachio finish.
